Tangy Cucumber Salad with Feta & Dill

I am constantly looking for dishes that will cool me down on a hot Texas day.  Tangy Cucumber Salad with Feta & Dill is just the side you’re looking for!  This salad has all the things I am looking for in the perfect summer side dish…quick and easy, no cooking required, great at room temperature, cool, light and full of great summer flavors!  It’s also a great way to use up all those cucumbers and tomatoes that are coming out of your garden this time of year!

Tangy Cucumber Salad with Feta

Despite the sweltering Texas heat, we tend to grill quite a bit outdoors in the summer. The Cowboy grills a mean ribeye steak and it’s a great way to enjoy the cool evenings while the kids play in the pool or have a water balloon fight.  Grilling gives me the night off from the kitchen, no turning on the stove or oven, so when we grill I am always looking for a no fuss side that can be put together in minutes and hang out in the fridge while I go enjoy the evening with the girls.


The secret to this refreshing salad is the seasoning for the dressing which is Rodelle’s Sesame Dill Seafood Seasoning.  I know what you are thinking…seafood seasoning?  This is no ordinary seafood seasoning.  It’s super versatile and can be used in tons of dishes, I have found all kinds of uses for it!  Dill, sesame seeds and garlic… it’s a great blend and complements the feta, tomato, cucumber combo perfectly.  I fell in love with Rodelle’s baking products years ago but I love having their seasoning blends around to add a little gourmet twist to our favorite everyday dishes.

This has become one of our go to summer salads.  I was not surprised that Maddie could not stop eating this and often requests it to have in the fridge for a quick lunch or side for our steak or burger.  She loves anything with feta!  Perfect for weekly meal prep or a simple side to take to your next BBQ or summer potluck!

Tangy Cucumber Salad with Feta & Dill comes together in just a few minutes and can easily be made a few hours in advance. Cool cucumbers, salty feta, creamy avocados, sweet tomatoes and a tangy dill dressing puts a delicious spin on this classic salad. Great for your next BBQ or cookout! Gluten Free and Low Carb

Ingredients
  • 1 large English cucumber, sliced or diced
  • 1/2 cup grape or cherry tomatoes, halved
  • 1/3 cup Feta cheese
  • 1/4 medium purple onion, thinly sliced
  • 1 ripe avocados, peeled & diced
  • 1/4 cup olive oil
  • 1 1/2 T fresh lemon juice or white wine vinegar
  • 1/4 tsp Dijon mustard
  • 1/4 tsp black pepper
  • 1/2 tsp salt
  • 1/4 tsp garlic powder
  • 1 T Rodelle’s Sesame Dill Seafood Seasoning
  • Fresh Dill (optional)
Directions
  • Step 1 Combine first 5 ingredients in a large bowl and toss to combine. In a small bowl, whisk together oil, lemon juice or vinegar, mustard and next four seasonings. Pour dressing over veggies and toss gently to coat. Refrigerate at least 2 hours before serving. Before serving garnish with chopped fresh dill for more dill flavor.
  • Step 2 **If preparing and serving the next day, prepare without the avocado and add the avocado about 2 hours before serving.
