It’s also a great way to use up all those cucumbers and tomatoes that are coming out of your garden this time of year!
Despite the sweltering Texas heat, we tend to grill quite a bit outdoors in the summer. The Cowboy grills a mean ribeye steak and it’s a great way to enjoy the cool evenings while the kids play in the pool or have a water balloon fight. Grilling gives me the night off from the kitchen, no turning on the stove or oven, so when we grill I am always looking for a no fuss side that can be put together in minutes and hang out in the fridge while I go enjoy the evening with the girls.
The secret to this refreshing salad is the seasoning for the dressing which is Rodelle’s Sesame Dill Seafood Seasoning. I know what you are thinking…seafood seasoning? Tangy Cucumber Salad with Feta & Dill comes together in just a few minutes and can easily be made a few hours in advance. - 1 large English cucumber, sliced or diced
- 1/2 cup grape or cherry tomatoes, halved
- 1/3 cup Feta cheese
- 1/4 medium purple onion, thinly sliced
- 1 ripe avocados, peeled & diced
- 1/4 cup olive oil
- 1 1/2 T fresh lemon juice or white wine vinegar
- 1/4 tsp Dijon mustard
- 1/4 tsp black pepper
- 1/2 tsp salt
- 1/4 tsp garlic powder
- 1 T Rodelle’s Sesame Dill Seafood Seasoning
- Fresh Dill (optional)
- Step 1 Combine first 5 ingredients in a large bowl and toss to combine. In a small bowl, whisk together oil, lemon juice or vinegar, mustard and next four seasonings. Pour dressing over veggies and toss gently to coat. Refrigerate at least 2 hours before serving. Before serving garnish with chopped fresh dill for more dill flavor.
- Step 2 **If preparing and serving the next day, prepare without the avocado and add the avocado about 2 hours before serving.
