GG’s Oil & Vinegar Coleslaw

Ya’ll this is a recipe that I have been meaning to post for some time…I am so excited to share it with you!  Why? Because this is one of those recipes that takes me right back to my childhood…GG’s Oil & Vinegar Coleslaw.  I know what your saying…Coleslaw??  This is no ordinary coleslaw.  It’s savory, tangy, crunchy, cool, refreshing and full of incredible flavor.  The best part is that it takes minutes to make and they longer it sits the better it gets!  Great for a summer BBQ, your next potluck or pack it for a quick low carb lunch!

I was introduced to the oil and vinegar version of coleslaw as a young child, it was really the first type of coleslaw that I ever had….that may the reason I never acquired a taste for the sweet creamy version.  Growing up we had a dear family friend and she was famous for making this yummy crunchy oil & vinegar coleslaw.  I remember always hoping it would show up at family functions and Sunday dinners and it was so good it eventually became my moms go to coleslaw!  This childhood favorite was the inspiration for GG’s Oil  & Vinegar Coleslaw! The taste is everything I remember and more.

I like to make quickly throw this coleslaw and keep it in the fridge for quick lunches or even a topping to a grilled burger for dinner.  The other night we used it on a topping for shredded beef and it was AMAZING!!  Maddie goes crazy over it which just makes my heart happy…it feels good to know that another generation will know the deliciousness of GG’s Oil & Vinegar Coleslaw.  I love making food memories with my girls!!

Just a note, my favorite Keto/low carb friendly sweetener is Pyure.  It is an organic blend of Stevia and Erythritol that is found in most grocery stores.  Maddie and I both use it in everything from smoothies to low carb baking.  Our taste buds like it and it has no weird aftertaste for us but it is not cup for cup for sugar like some other sweeteners.  I know everyone has their personal preference when it comes to low carb sweeteners so, if you are using erythritol, liquid stevia, Xylitol, monk fruit or another sweetener you will need to use the equivalent to ½ to 1 tsp of sugar.  Since these sweeteners vary in their sweet factor, start out with the smallest amount and work up!

GG’s Oil & Vinegar Coleslaw is a show stopper…the ultimate summer side!  If you aren’t a fan of a sweet slaw, this is a must try!!  The combination of veggies is really what makes this coleslaw special.  Cabbage, salty black olives, savory bell pepper, crunchy celery, cool cucumber and pimento….the combination is simply yummy!  Topped with an oil and vinegar dressing, it’s a simple salad that packs a punch!  The dressing, olive, pepper combo almost lends an Italian flare that is unexpected and incredibly delicious.  There is no mayo so this salad can sit out at a BBQ or cookout with no problem…it will only get better.  You can also easily double the recipe for a crowd.  Gluten free, keto friendly and low carb, I guarantee it will be a crowd pleaser!!

Ingredients
  • 3 cups shredded cabbage
  • 2 2.5 oz cans of sliced black olives, drained
  • 1 cup diced bell pepper
  • 1 cup diced celery
  • 1 cup diced English cucumber
  • 3 T finely diced purple onion
  • 1 4oz jar diced pimentos, drained
  • 4 T red wine vinegar
  • ½ tsp onion powder
  • 1 ½ tsp salt
  • ¼ tsp pepper
  • ½ tsp dry mustard
  • ¼ tsp granulated garlic
  • ¼ tsp Pyure or ½ - 1 tsp of your favorite sweetener
  • 1/3 cup light olive oil or avocado oil
Directions
  • Step 1 Combine the first 7 ingredients in a large bowl. In a medium bowl, whisk together vinegar, seasonings and your sweetener of choice. Slowly whisk the oil into the vinegar and seasonings. Pour oil and vinegar dressing over the veggies and toss to coat. Refrigerate for at least an hour before serving…the longer it sits the better it gets! Store in the refrigerator.
