Maddie, Paige and I are huge roasted cauliflower fans, but The Cowboy not so much. Honestly, he’s never been a huge fan of cauliflower but I’ve been working on converting him with a few recipe. One his all time favorite cauliflower recipes is the Roasted Poblano Cauliflower Mac & Cheese that’s in my new book, The Southern Keto Cookbook…so gooood!! And, one of the few others he enjoys is this easy roasted cauliflower with aioli recipe!
If your not a cauliflower lover like The Cowboy or haven’t tried roasted cauliflower yet, listen up…you can’t imagine how tasty cauliflower can be!
Simple, Delicious Roasted Cauliflower
This recipe starts out by roasting the cauliflower. I toss it with oil and some of my favorite seasonings and it roasts in a hot oven till golden brown and DELISH!
As you know, my spice cabinet is full of Fiesta Brand Seasonings! I use everything of theirs from ground black pepper and garlic powder to their spice blends. No matter what you’re cooking they have you covered! For those not in the Texas area, they can be found online on Amazon or you can order directly from their website! Be sure to check out their River Road line of cajun seasonings! For this simple recipe, I kept the seasonings simple and used garlic powder, black pepper and a little of their Zesty Italian Delight seasoning, which is a salt free Italian seasoning. Feel free to use your favorite Italian seasoning blend.
Making the easy Red Pepper Aioli
Ok, this is not a true aioli, but for all purposes, that’s what I’m calling it. i love using homemade garlic mayo or my 3 minute mayonnaise for this aioli but you can use whatever mayo you love for this roasted cauliflower recipe. I highly recommend staying away from may made with highly processed oils like canola, vegetable or safflower but you do you. I know it’s not always practical to make mayo and good mayonnaise can be pricey!
Now, that being said, this red pepper aioli literally takes minutes to put together. You can roast your own red peppers if you’d like or use the jarred version. If you want to roast your own, check out my post on how to make your own roasted red peppers….so easy!
What else can I do with this red pepper aioli?
I love to dip cucumbers in it or use it as a dipping sauce for turkey rollups. Lettuce wraps, low carb sandwiches, dipping sauce for chicken…the possibilities are pretty endless but this keto roasted cauliflower with red pepper aioli side dish is a great place to start!
Once the cauliflower is out of the oven, the red pepper aioli gets drizzled on top. Sprinkle with chopped bacon, if desired, and serve! It’s could not be easier or more delish!
Roasted Cauliflower with Red Pepper Aioli is a delicious way to take your cauliflower game to the next level! Quick and easy, this keto and low carb dish pairs perfectly with anything from chicken to steak! Give it a try and let me know what you think!
