Garlic Lime Cauliflower Rice

Quick and easy Keto Garlic Lime Cauliflower Rice is a delicious and simple keto and low carb side that you can serve up with anything from steak to seafood!  Made with frozen cauliflower rice, this veggie dish takes just a few minutes from pan to table and is one side the whole family will love!

If you anything like me, I rarely have problems deciding what protein I’m in the mood for as far as dinner goes, but picking a side dish is a whole other issue!  Let’s face it, if your keto or low carb your veggie choices are somewhat limited so really the variety is in how you prepare the veggies!  One of my favorite veggies to dress up (or down) is cauliflower and cauliflower rice is a keto dinnertime go to in our house.  

Fresh or Frozen?

I know a lot of people love making fresh cauliflower rice but, for me, frozen is the way to go.  I find the cost is about the same and the frozen just saves me some prep and cleanup time when I’m trying to get dinner on the table! That being said fresh or frozen will work here!

This keto friendly Garlic Lime Cauliflower Rice is inspired by the hugely popular rice dish I serve on the ranch to our guests and starts out with onions sautéed in a little butter.  Next in goes the garlic and then the cauliflower rice.  Now the secret to this cauliflower rice dish is to make sure that the cauliflower rice going into the pan is as dry as it can be.

How to dry Cauliflower rice

To prepare the cauliflower rice, steam it in the package or in a covered bowl and then press it between a few layers of paper towels to remove any excess water that will make your cauliflower rice too liquidy.  Once the paper towels are saturated, replace with a few dry ones and continue pressing until most of the moisture is gone and the rice is fairly dry. The little bit of excess moisture will cook off in the pan and leave you with a fluffy Garlic Lime Cauliflower Rice!

Once the cauliflower rice is in the pan, in goes the lime zest, cumin, salt and pepper!  That’s it!  In less than 10 minutes you have a delicious, healthy and flavorful keto friendly side. Garlic Lime Cauliflower Rice dish makes a great side or even base to a “bowl” type meal!  

Keto Friendly Topping Ideas for Garlic Lime Cauliflower Rice

Try leftover shredded chicken on top of this yummy rice topped with cheese and guacamole or even my Chipotle Mexican Shredded Beef topped with crisp shredded cabbage and diced avocado!  Also top with beef or chicken fajitas, steak bites, taco meat…the possibilities are endless!

Garlic Lime Cauliflower Rice

This quick and easy low carb side is the perfect match for any Tex-Mex inspried meal!

Ingredients

  • 3 cups thawed cauliflower rice pressed and dried
  • 2 Tbsp. butter
  • 1/2 medium red onion diced
  • 3 cloves garlic finely minced
  • 1/2 tsp. cumin
  • Zest of 1 lime
  • 3 tsp. fresh lime juice about 1/2 lime
  • 1/2-1 tsp salt
  • 1/4 tsp. black pepper
  • Chopped Cilantro optional

Instructions

  • In a large skillet over medium high heat, melt the butter and add the chopped onions.  Saute onions until translucent, about 3-5 minutes.  Stir in the garlic and cumin and cook for another minute.  Add in the dry cauliflower rice, lime zest and juice and cooked till heated through, another 2-3 minutes.  Taste and adjust seasoning as desired. Garnish with chopped cilantro if desired.
