Ultimate Keto Peanut Butter Cookies

If you a lover of peanut butter cookies like me, stop everything and get out your mixing bowl, these Keto Peanut Butter Cookies are what every peanut butter cookie should aspire to be.  I don’t use the word ultimate lightly!  Soft, chewy and crisp on the edges, with amazing peanut butter flavor everything you want in a peanut butter cookie!

During the holidays, I like to indulge in a few keto treats that I would typically save for special occasion.  I mean, let’s face it, the holidays are a special time of year and I don’t mind baking up a few extra treats here and there for the family to enjoy.  I keep them keto and enjoy my holiday!

I have not been this excited about a recipe in a long time.  I’ve been working on perfecting a peanut butter cookie recipe for years and I’m excited to announce I’ve done it!  This cookie reminds me of the days of going to the mall with my mom and going to the cookie shop in the food court to grab a my favorite war, chewy peanut butter cookie.  Guys, these are so easy, taste incredible and a must try!

Keto Peanut Butter Cookies are a must have holiday treat!

One of my favorite treats are cookies.  Ya’ll, I don’t know what’s happened over the past ten years, I used to love cake and pasties but these days I can’t resist a good cookie!  Now, when I say I’ve been working on this recipe for three years, I mean it.  Peanut butter cookies are a family and childhood favorite, so if they aren’t just right….it’s not happening.  I’ve tried literally a ton of recipes online over the years to try to get the bakery soft, chewy on the inside, full of peanut buttery flavor and failed everytime…until now.

I know there is a popular recipe for 3 or 4 ingredient peanut butter cookies floating around but I never had any luck with them.  They tasted okay but the texture was all wrong, dry and crumbly and they always ended up in the trash no matter what I did to try to improve them.  So, I took my Keto Cowboy Cookie recipe and modified it to create a swoon worth, chewy, soft peanut butter cookie that takes me right back to my childhood and has my family begging for more!!

Making the Ultimate Keto Peanut Butter Cookies

These cookies are so simple to make and start like the traditional version, by creaming butter and peanut butter with the sweetener. Then an egg and some vanilla go into the bowl. Next, the almond flour, coconut flour, baking soda and salt. I also add some grassfed gelatin here to to keep things chewy and soft.

What sweetener do you use in this cookie recipe?

I typically always have a few sweeteners on hand in the pantry. Over the past few years, I’ve tried a ton and have my favorites for different purposes in the ktichen. In the past few months I’ve been playing with a sweetener made by High Key that’s a blend of monkfruit, erythritol, stevia and allulose, and needless to say I’m incredibly impressed and it’s a sweetener I now keep on hand!

I have also made these cookies with my usual monkfruit/erythritol blend, both cookies are amazing so use either one. The allulose sweetener will help the cookies spread a little better in the oven without pressing them down, although I do like to press them with a fork for the traditional peanut butter cookie look!

What is allulose?

Allulose is a rare sugar that is not digested and therefore doesn’t impact blood sugar. The thing about allulose is it acts very similar to sugar in baking and unlike erythritol, does not heavily crystallize when cooled! High Key’s allulose sweetener blend is great because it takes advantage of the strengths of all the sweeteners by blending them and de-emphasizing their weaknesses. If you still haven’t found your perfect keto sweetener or you do a lot of baking, I highly recommend keeping it on hand!

Cooling and Storing your cookies

Out of the oven these Keto Peanut Butter Cookies are really soft. Let them cool on the pan for 10 minutes and them remove carefully with a spatula to a cooling rack to cool completely. You can store the cooled cooked in a covered container at room temperature for a few days, but they wont last that long!!

Ingredients

Instructions

  • Preheat oven to 350 degrees.
  • Combine the butter, peanut butter and sweetener and beat until well combined. Mix in the egg. Add the almond flour, coconut flour, salt, baking soda, gelatin and vanilla and mix well to combine. Refrigerate dough for 10-15 minutes.
  • Scoop dough onto a parchment lined sheet pan and bake for 8 minutes. Cool completely on pan. Store cookies in a covered container at room temperature.
