When things get crazy around here during the summer, shakes and smoothies are our go to for a quick meal.  While I’m a chocolate lover, Maddie loves strawberry so together we came up with this incredibly yummy Keto Dairy Free Strawberry Colada Milkshake!  It’s packed full of healthy fats and keeps her full for hours!  The greatest thing is it’s so easy to make she can do it herself in less than 5 minutes!

I’m a pretty boring eater on a daily basis…I eat the same thing pretty much every day…and I love my coffee!  I enjoy the simplicity of it. For the girls, summer is about ice cream, popsicles, milkshakes, fun fruity drinks and yummy treats…and I love that!   So, we work hard to come up with delicious and fun low carb alternatives for the sugar filled treats of the past…ya’ll the best is when the low carb or keto version tastes better…. SCORE! And around here we don’t stop until it does!

Keto Dairy Free Strawberry Colada Milkshake

Paige, like me is a chocolate fanatic and Maddie, like the Cowboy, loves the fruity flavors.  Years ago, when we first started making “healthy” smoothies and shakes, we used a ton of banana and mango for sweetness and thickening power and sometimes even juice for the base (cringe)…really what they were where giant mason jars of sugar!  I was always amazed that Maddie could drink a huge smoothie and then be hungry just a short time later.  Now we know so much better and have ditched the high sugar fruits for some low sugar strawberries, paired with rich coconut milk, the results are scrumptious! We also have some new tricks to get a thick, creamy milkshake without the banana or other fruit you may have used in the past. This Strawberry Colada Milkshake is probably Maddie’s all-time favorite and the best part is that she helped me come up with the recipe!

Ever since Maddie was a baby she has had terrible reactions to milk….I mean TERRIBLE!  We’ve found out over the years that she really does the best with a limited amount of dairy in her diet, so this Keto Strawberry Colada Milkshake is completely dairy free!  We use a combination of unsweetened almond milk and full fat coconut milk to get that creamy factor going and the coconut together with the strawberry makes for an incredible fruity combination!

Strawberry Colada Milkshake

We like to used Pyure sweetener in many of our recipes including this one.  Sweeteners like Pyure are twice as sweet as sugar, so we use half the amount we would use for another type of sweetener.  If you are using a 1:1 sweetener, you are going to need to double the amount listed or do it by taste!  Also, Maddie likes to add coconut oil to her shake because it combined with the coconut milk and chia helps her stay full and satisfied for hours….which is the point of a LCHF or ketogenic diet…and it tastes amazing!  Even the Cowboy said it was a “10”!

Strawberry Colada Milkshake - Keto, Low Carb, Dairy Free

Ingredients

  • 1/3 cup unsweetened almond milk
  • 1/3 cup coconut milk, full fat
  • 3-4 frozen whole frozen strawberries
  • 1/2 Tbsp chia seeds
  • 1 tsp Pyure
  • 1 pinch pink salt
  • 1 Tbsp freeze dried strawberries, optional
  • 1/4 tsp coconut extract
  • 1/4 tsp vanilla extract
  • 1/2 Tbsp coconut oil optional
  • 4-5 ice cubes

Instructions

  • Add all ingredients except ice to high speed blender and blend until smooth & creamy.  Add ice and blend again until desired consistency is reached...Pour into glass and enjoy!

Notes

If you are not diary free, you can substitute heavy cream for the full fat coconut milk. If you want a more intense strawberry flavor you can add the freeze dried berries, but they do increase the carb count of the shake.
