Our family loves pizza night, we all have our favorite toppings and even our favorite crusts…but sometimes on pizza night we are want something a little out of the box. Tex-Mex Chicken Taco Pizza is one of our favorite pizza creations! This Chicken Taco Pizza combines our love of our two favorite things…tacos and pizza. It’s piled with all of our yummy taco toppings and a spiced up shredded chicken that will blow your mind! Best part…it’s super simple to make, great for meal prep and the whole family, low carb or not, will go crazy for it!

You know when I’m not testing recipes or ingredients to share with ya’ll, I’m the resident chef for our guests out here on the Ranch! Let me tell you, after days of cooking breakfast, dinners and desserts…a quick weeknight meal between guest visits is often a must! This Chicken Taco Pizza is one of my favorite options for a fun, quick weeknight dinner that hits all of those yummy, comfort food notes!
So, while Maddie and I live a low carb or Keto lifestyle, as you may have figured out, I also cook for many people with other dietary restrictions, allergies or may even no issues at all…including the Cowboy and my little one! Sometimes when cooking for so many different needs, it’s great to have versatile recipes on hand that you can modify to everyone liking…and this Chicken Taco Pizza is perfect!
The Cowboy and Paige prefer a regular pizza crust and Maddie and I love the Fat Head crust with this pizza…although when we made it on Fat Head dough no one can really even tell the difference! A cauliflower crust would also be amazing with this…but the point is…the recipe can easily satisfy everyone in the family even if they aren’t keto, low carb or even gluten free! I do have to say that even Paige ate three pieces on Fat Head dough and couldn’t stop talking about how yummy it was…I highly recommend! Definitely Kid & Cowboy Approved!
The Tex-Mex style shredded chicken is the thing that takes this fun twist on pizza over the top! Cooked with onions and tomatoes and spiced up with chili powder, paprika and cumin, this simple chicken taco meat is jam packed with amazing Tex-Mex flavors. Since the seasonings are such a huge part of making this chicken taco meat amazingly delicious, make sure to use high quality chili powder and spices for the best results! This recipe is a great way to use up any leftover cooked chicken you may have in your freezer or fridge. I try to always have some cooked chicken in the freezer for recipes just like this! For this, I cooked one 4 pound chicken and it yielded about 4 cups of chicken. I used my instant pot to quickly cook it, then I let it cool and picked and shredded it for the recipe and packed the rest up for the freezer! I love dark meat or a combination but feel free to use all white meat if that’s what you like!

We used a coconut flour Fat Head crust for this pizza but you can use any crust you like, whether it be store bought or homemade. Heads up…most crusts including, Fat Head crust, cauliflower crust and even some refrigerated crusts, need to be partially cooked before topping. For this pizza, you will need one recipe of your favorite crust, par-baked and ready to be loaded up with yummy chicken and cheese!! I used the Fat Head crust made with coconut flour from Wholesome Yum which can be found here!

Keto Mexican Shredded Chicken
Ingredients
- 3 Tbsp. butter
- 1/2 cup diced onion
- 1 Tbsp. chili powder
- 2 tsp. cumin
- 2 tsp. granulated garlic
- 1 Tbsp. paprika
- 1 tsp. salt
- 4 cups cooked chicken (dark & white) shredded or pulled
- 8 oz. tomato sauce
- 1/3 cup chicken stock or water
Instructions
To Prepare the Chicken:
- In a large skillet, over medium high heat, melt the butter and add the chopped onions. Sauté onions until translucent, about 5-7 minutes. Add the pices to the butter and onions and cook for another 30 seconds. Then add the cooked chicken, tomato sauce and water and stir to combine. Turn the heat to low and simmer for 5-10 minutes. Taste and adjust seasoning as needed. You may need more salt if you used water instead of stock. Serve hot over cauliflower rice or in your favorite keto taco shell!
