Keto Cheese Crackers

Ingredients

  • 5 Tbsp. butter salted & softened
  • 1 oz cream cheese softened
  • 4 oz. Pepper Jack cheese shredded
  • 1 cup almond flour
  • 2 Tbsp. coconut flour
  • ¼ tsp. salt
  • ¼ tsp. cumin
  • ¼ tsp. garlic powder
  • ¼ tsp. onion powder
  • ¼ cup finely chopped pecans

Instructions

  • In the bowl of a stand mixer cream together butter and cream cheese. Add the shredded cheese and mix until well combined. Add the next 6 ingredients and continue to mix. Stir in the chopped pecans.
  • Place dough into plastic wrap and form into a roll about 2 ½ inches thick. Wrap up tightly and chill or freeze until firm.
  • Slice chilled dough into ¼ “ thick slices and place on a parchment lined sheet pan. Bake at 300 degrees for 20-25 minutes or until lightly golden brown. Cool crackers completely on pans before removing.
