Grilled Salmon with Cilantro Lime Crema

Ingredients

  • 1 ½ pound salmon fillet cut into four pieces
  • Olive oil

For the Spice Rub:

  • 1 ¼ tsp. dried oregano crushed
  • ¾ tsp. garlic powder
  • ½ tsp. paprika
  • ½ tsp. chili powder
  • 1/8 tsp. Cayenne pepper
  • 1 tsp. salt

For the Cilantro Lime Crema

  • ¼ cup sour cream
  • ¼ cup mayonnaise your favorite
  • 1 Tbsp. fresh lime juice
  • 1 Tbsp. chopped cilantro
  • ¼ tsp. salt
  • 1 clove garlic finely minced
  • ¼ tsp. lime zest
  • 1/8 tsp. cumin

Garnish: Chopped Cilantro, Fresh Lime

Instructions

  1. For the Crema: In a small mixing bowl, combine all the ingredients for the crema and stir will to combine. Cover and refrigerate until serving.
  2. Preheat your grill to 350-400 degrees.
  3. In a small bowl, combine all the ingredients for the spice rub and stir well to combine. Drizzle the pieces of salmon with olive oil and liberally season both sides with the spice mixture. Place the salmon skin side down on the hot grill. Cook about 8 minutes per side and flipping once.

  4. To serve: Spoon or drizzle the crema over the grilled salmon and sprinkle with chopped cilantro. Serve with fresh lime.
