Combine the first mayo and the next 8 ingredients into the blender and blend on high until smooth and combined. Stir in the dried herbs, pour into a container, cover and refrigerate until time to serve.
In a medium mixing bowl, break apart the ground beef and add the next 7 ingredients. Gently combine together, mixing the seasoning and veggies throughout the meat. You do not want to over mix or over work the meat mixture or the steak bites will be dense. Divide the mixture evenly into 8 portions and gently roll each potion into a ball then flatten into about ¼ inch thick. Repeat for all 8 portions.
Preheat a heavy skillet over medium high heat. Add the patties 4 at a time and cook about 3 minutes per side or until they reach your desired doneness. You want a nice dark sear on the outside of the patties and a nice juicy, medium interior!
