Tex-Mex Chicken Taco Pizza

Tex-Mex Chicken Taco Pizza is a quick, fun and tasty weeknight meal with a south of the border flare!  Your favorite crust topped with kicked up chicken taco meat and loaded with all of your favorite toppings, this meal is about to become a new family favorite!

Ingredients

For the Tex-Mex Chicken Taco Meat:

  • 4 cups cooked chicken (dark & white) shredded or pulled
  • 2 Tbsp. butter
  • 1/2 cup diced onion
  • 8 oz. tomato sauce
  • 2 Tbsp. chili powder
  • 3 tsp. cumin
  • 3 tsp. granulated garlic
  • 1 1/2 tsp. paprika
  • 3 tsp salt

Toppings:

  • Shredded Lettuce
  • Diced tomatoes
  • Black Olives
  • Salsa
  • Diced Avocado
  • Sour Cream

Instructions

To Prepare the Chicken:

  • In a large skillet, over medium high heat, melt the butter and add the chopped onions. Sauté onions until translucent, about 5-7 minutes. Then add the cooked chicken to the onions and stir to combine. Add the tomato sauce and the spices and salt to the chicken mixture and stir to fully incorporate the spices. Turn the heat to low and simmer for 5-10 minutes. Set aside.

To Assemble the Pizza:

  • Preheat oven to 400 degrees.
    Make sure your parbaked crust is on a parchment lined sheet pan. Spread 2-4 tablespoons of your favorite salsa evenly over the pizza crust. The amount will depend on your tastes and size of your crust. Then add the prepared chicken taco meat evenly over the salsa. Top the chicken with shredded Monterrey Jack Cheese.
    Place pizza in the oven and bake for 10-15 minutes or until cheese is melted as desired.
    Top with lettuce, tomato, olives, diced avocado and drizzle with sour cream! Serve with salsa and enjoy!
