The last month has been quite a whirlwind! Over the past few weeks, the Cowboy and I made some life altering career changes, packed up the girls, sold our house and moved to a ranch in the heart of Texas…quite literally. We are rebooting and it has been an awesome experience!


With all the craziness going on, I love being able to make meals that my family goes crazy for…it brings them away from the chaos and back to something familiar…at least for dinner time. One of our family favorite comfort food dishes is chicken & rice…anyway they can get it, my girls just love it. Well, I reworked a family favorite into a kicked-up version that opened to rave reviews.  I love it when I don’t have to ask if something is good, I can tell by the nodding and silence at the table!

 

Easy Tex-Mex Chicken & Rice Casserole is creamy, cheesy and packed full of spicy Tex-Mex flavors. I love that you can use leftover chicken to get this dish on the table in no time at all, it uses ingredients that you probably have on hand right now and it’s gluten free to boot!  You can even save more time by using leftover or frozen rice…it doesn’t get easier than that.
